RE: filling the student teaching requirement while actually teaching. You *might* be able to swing something with the college/university you are taking courses at. I live in Massachusetts and my husband is going through something similar (he is currently a teacher but has to complete grad classes and has to meet a similar student teaching requirement.) Is there an advisor at the school you could meet with? That's what I would suggest. Some schools are willing to work it out so that your job serves as your student teaching - you attend a concurrent seminar course and hand things in (lesson plans and such) to a prof or advisor, but they can be from your actual job.
